Aji [Peruvian Green Sauce] Recipe

I have been on a mission to recreate this since it was served to me in a Peruvian restaurant over a year ago. Countless tries, I think I got it down to just how I remember it. This is a sauce common in Peruvian dining and it is often served with roasted chicken. This has quickly become my favorite sauce - I serve with chicken, tostada, roasted potatoes, even french fries.
